<p><strong>Homemade Blueberry Syrup</strong></p>
<p>Makes about 4 cups.</p>
<p>* 5 cups organic blueberries, washed<br />
* 3 cups water<br />
* 1 cup Turbinado sugar, firmly packed (or white sugar)<br />
* 1 organic lemon, whole, washed</p>
<p>1. Using a sharp <a href="http://www.beso.com/kitchen/paring-knife/259-258339/259-263959/259-273304/259-272486/259-393707?af_assettype_id=4&amp;af_creative_id=5&amp;af_id=27585&amp;af_placement_id=5&amp;rf=af1" onclick="javascript:pageTracker._trackPageview('/outbound/article/www.beso.com');" target="_blank">paring knife</a>, peel three or four strips of lemon peel from the lemon. Skin should be about 1/2 inch wide and not have too much of the bitter pith or white part on it. Then juice the lemon, and set both zest and juice aside.<br />
2. Place blueberries and 1 cup of the water in a medium pot. Don’t worry about stems or leaves; they will be strained out later. Using a potato masher, crush the berries.</p>

<p>3. Over medium-high heat, bring the berries and water to a boil, then lower the temperature to medium-low. Simmer berries for 15 minutes, stirring occasionally. They will darken considerably.<br />
4. Remove pot from heat and ladle berries into a fine sieve set over a heat-proof bowl or measuring cup. Using the back of a smaller ladle, press on the berry solids to extract as much juice as possible. Discard solids.</p>

<p>5. Wash out your pot, then add the remaining 2 cups of water, lemon peel (not juice yet), and the sugar. Bring to a boil and boil rapidly for about 15 minutes until the mixture thickens (or reaches 225°F).<br />
6. Add blueberry juice and 2 tablespoons lemon juice and stir to combine. Boil another minute or two. Remove from heat and allow to cool. Remove lemon zest.<br />
7. Using a funnel, pour syrup into clean jars. Top with lid and store in the refrigerator for up to six months.</p>

			<content:encoded><![CDATA[<p>My husband I gave our kitchen a facelift this year.  We were on a tight budget so we were pretty limited as to what we could do.  We decided to replace the truly ugly black and white swirled vinyl  floor with a beautiful slate grey porcelain tile.  We also replaced the old range with a gorgeous new stainless model from <a title="Sears" href="http://www.sears.com" onclick="javascript:pageTracker._trackPageview('/outbound/article/www.sears.com');" target="_blank">Sears</a>, added a hood that vented outside (the old hood just re-circulated the air into the room), replaced some plastic closet doors with some nice shuttered doors, and generally tried to liven the place up. </p>
<p>We didn&#8217;t replace the cabinets because we couldn&#8217;t really afford to.  The only problem is that we still don&#8217;t have enough storage space in our kitchen.  So we&#8217;ve been shopping for a new <a title="kitchen cart" href="http://www.beso.com/kitchen-carts/kitchen-cart?af_assettype_id=4&amp;af_creative_id=5&amp;af_id=27585&amp;af_placement_id=5&amp;rf=af1" onclick="javascript:pageTracker._trackPageview('/outbound/article/www.beso.com');" target="_blank">kitchen cart</a> that will match our old cabinets but still be able to transition when we eventually do upgrade. </p>
<p>This is one of my favorites so far:</p>

<p>I really like this kitchen cart from <a title="Target.com" href="http://www.beso.com/target/search?af_assettype_id=4&amp;af_creative_id=5&amp;af_id=27585&amp;af_placement_id=5&amp;rf=af1" onclick="javascript:pageTracker._trackPageview('/outbound/article/www.beso.com');" target="_blank">Target.com</a>.  It has two big cabinets on either side with 2 shelves a piece in them, which are good for storing large items like <a title="Mixing Bowls" href="http://www.beso.com/mixing-bowl/search?af_assettype_id=4&amp;af_creative_id=5&amp;af_id=27585&amp;af_placement_id=5&amp;rf=af1" onclick="javascript:pageTracker._trackPageview('/outbound/article/www.beso.com');" target="_blank">mixing bowls</a> or your <a title="Blender" href="http://www.beso.com/blender/search?af_assettype_id=4&amp;af_creative_id=5&amp;af_id=27585&amp;af_placement_id=5&amp;rf=af1" onclick="javascript:pageTracker._trackPageview('/outbound/article/www.beso.com');" target="_blank">blender</a>.  Plus it has four drawers in the certain for storing smaller items like silverware.  There is also a towel rack on the side and a big granite countertop.  The whole thing is on wheels which makes it perfect if you want to use it sometimes as a kitchen island and other times have against a wall.</p>
<p>I am not certain if we&#8217;ll want to go with a dark granite when we replace our countertops, which would be my only hesitation to buying this cart.  However, I think that having a granite top is much nicer if you want to use the cart for prep work.  I&#8217;ve seen a lot of kitchen carts with plain wood tops, and I don&#8217;t think that&#8217;s ideal for food prep.  I am still going to shop around a bit, but I think this cart would make a great addition to any kitchen, and may end up in mine!</p>

<p>From Donna Hay, serves 6-8</p>
<ul>
<li>1 cup (250 ml) water</li>
<li>125 g unsalted butter, chopped</li>
<li>1/3 cup (35 g) cocoa, sifted</li>
<li>2 cups (300 g) plain (all-purpose) flour, sifted</li>
<li>1 teaspoon bicarbonate of (baking) soda, sifted</li>
<li>2 cups (440 g) caster (superfine) sugar</li>
<li>2 eggs</li>
<li>1/2 cup (125 ml) buttermilk</li>
<li>1 teaspoon pure vanilla extract</li>
</ul>
<ol>
<li>Preheat oven to 160° C (325° F).  Lightly grease 2, 18 cm round cake tins and line with parchment paper.</li>
<li>Place the water, butter and cocoa in a small saucepan over medium heat and stir until the butter has melted; set aside.</li>
<li>Using a fine-mesh <a href="http://www.beso.com/kitchen/sieve?af_assettype_id=4&amp;af_creative_id=5&amp;af_id=27585&amp;af_placement_id=5&amp;rf=af1" onclick="javascript:pageTracker._trackPageview('/outbound/article/www.beso.com');" target="_blank">sieve</a>, sift the flour and bicarbonate of soda into a large bowl.  Add sugar and whisk to combine well.</li>
<li>Add the cocoa mixture and whisk to combine.  Add the eggs, buttermilk and vanilla and whisk to combine.</li>
<li>Divide batter evenly between the 2 cake tins.  Bake for 40 to 45 minutes or until a cake tester inserted in centre of cake comes out clean.</li>
<li>Allow to cool in the tins on a wire rack for 10 minutes.  Turn out onto wire racks to cool completely.</li>
</ol>
<p>Chocolate Cream Cheese Frosting</p>
<ul>
<li>100 g unsalted butter, softened</li>
<li>500 g cream cheese</li>
<li>2 cups (320 g) icing (confectioner’s) sugar, sifted</li>
<li>1/2 cup (50 g) cocoa, sifted</li>
</ul>
<ol>
<li>Place butter and cream cheese in the bowl of a stand mixer, fitted with the paddle attachment and beat on medium-high speed for 6 to 8 minutes or until pale and creamy.</li>
<li>Meanwhile, using a fine-mesh sieve, sift icing sugar and cocoa into a medium bowl. Repeat an additional 2 times.</li>
<li>Reduce stand mixer to low speed and gradually add the icing sugar, cocoa mixture.</li>
<li>Increase speed to medium-high and continue to beat for a further 6 to 8 minutes or until light and fluffy.</li>

<p>Oatmeal Cream Pies<br />
recipe from Honey &amp; Jam</p>
<p>* 1 cup butter, softened<br />
* 3/4 cup brown sugar<br />
* 1/2 cup sugar<br />
* 1 tsp vanilla<br />
* 2 eggs<br />
* 1 1/2 cups flour<br />
* 1/2 tsp salt<br />
* 1 tsp baking soda<br />
* 1/4 tsp cinnamon<br />
* 1 tbsp cocoa powder<br />
* 1 1/2 cups quick oats</p>
<p>In the bowl of a mixer, cream together the butter and sugars. Beat in vanilla and the eggs, one at a time until well incorporated. Whisk together the flour, salt, baking soda, cinnamon, cocoa powder, and oats. Beat into the cream mixture. Refrigerate cookie dough for 15 minutes.</p>
<p>Drop about 1 tbsp of dough onto an ungreased cookie sheet and bake at 350 degrees for about 10 minutes. The centers should still be slightly underdone when you remove them from the oven. Cool completely on a wire rack.</p>
<p>Spread about 1 tbsp of cream filling (recipe below) on the bottom of one cookie and then top with another cookie.</p>
<p>Cream Filling</p>
<p>* 1/2 cup vegetable shortening (I imagine butter would work just fine)<br />
* 1 1/2 cups marshmallow cream<br />
* 2 cups powdered sugar<br />
* 1 tsp vanilla<br />
* 1-2 tbsp milk, as needed</p>
<p>Cream together the shortening and marshmallow cream. Add the powdered sugar and vanilla, beat well. Thin with milk until you get the right consistency. The mixture should be thick and creamy, but easily spreadable.</p>

<p>Instructions -</p>
<ol>
<li>Dice pork belly in 1/2″ cubes. Set aside.</li>
<li>Make a sachet with ginger, star anise, and cinnamon. Set aside.</li>
<li>Heat oil in a <a href="http://www.beso.com/cooking-baking/t-fal-t-fal-14-wok-a9108962/2061961298/detail?af_assettype_id=4&amp;af_creative_id=5&amp;af_id=27585&amp;af_placement_id=5&amp;rf=af1" onclick="javascript:pageTracker._trackPageview('/outbound/article/www.beso.com');" target="_blank">wok</a> (like this <a href="http://www.beso.com/cooking-baking/t-fal-t-fal-14-wok-a9108962/2061961298/detail?af_assettype_id=4&amp;af_creative_id=5&amp;af_id=27585&amp;af_placement_id=5&amp;rf=af1" onclick="javascript:pageTracker._trackPageview('/outbound/article/www.beso.com');" target="_blank">T-Fal 14&#8243; Wok</a>) on medium heat. Add pork belly and stir until just turning color.</li>
<li>Stir in soy sauce, rice wine, and sugar. Add the sachet and 2 <a href="http://www.beso.com/kitchensupplies_utensils/measuring-cups/259-274499/259-272486/259-273284/259-279690/259-259061" onclick="javascript:pageTracker._trackPageview('/outbound/article/www.beso.com');" target="_blank">cups</a> of water (I like to use <a href="http://www.beso.com/oxo/kitchensupplies_utensils/oxo-steel-measuring-cups/1918948213/detail?af_assettype_id=4&amp;af_creative_id=5&amp;af_id=27585&amp;af_placement_id=5&amp;rf=af1" onclick="javascript:pageTracker._trackPageview('/outbound/article/www.beso.com');" target="_blank">OXO Steel Measuring Cups</a>). Turn up the heat and bring to a boil.</li>
<li>Allow to boil for 2 minutes. Sprinkle with fried shallots and Chinese 5 spice powder. Reduce to a simmer and cook covered for 1 hour, or until meat is tender. Remove sachet. Serve on rice with <a href="http://www.foodmayhem.com/2010/07/pickled-mustard-green-relish.html" onclick="javascript:pageTracker._trackPageview('/outbound/article/www.foodmayhem.com');">pickled mustard green relish</a>.</li>
